
There is not one person I know that does not love this bread. It is like a vacation in your mouth. The bread is super moist and yummy. My husband really likes it when I add 1 1/2 cups of mini chocolate chips for an extra special treat. This recipe makes 2 loaves. This recipe is adapted from Family Fun Magazine.
2 cups canned pumpkin
3 cups sugar
1 cup water
1 cup vegetable oil
4 eggs
3 1/3 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon of nutmeg
Heat oven to 350 degrees. Grease 2 loaf pans and dust with flour lightly.
In large bowl, add pumpkin, sugar, water, vegetable oil & eggs and beat until well mixed. In another bowl, add all the remaining dry ingredients and combine well. Slowly add dry ingredients to pumpkin mixture, beating until smooth.
Divide the batter between the 2 pans, and bake for 60-70 minutes or until toothpick comes out clean.
Cool in pans for 10-15 minutes before removing. To remove, invert pan on rack and tap bottom of pans.
This is great with cream cheese or butter spread on slices, or just plain!!!
